Recipes/Fish Cakes

Ingredients:
450g haddock or Cod fillets
2 bay leaves
350g potatoes
5 ml garlic powder (or 2 cloves garlic minced)
3ml salt
5ml dry mustard powder
15ml margarine
2 eggs
30ml corn starch
60ml bread crumbs
Directions:
1: place fish in pan with bay leaves, just cover with water, bring to a boil then reduce to a simmer and let sit, covered, for 4 minutes
2: remove the fish and drain, set fish on a plate to cool slightly, and then flake the meat.
3: cook the potatoes as you prefer to make mashed potatoes
4: as you mash the potatoes add in the garlic, margarine, salt and mustard powder.
5: beat one of the eggs and mix into the potatoes
6: gently mix the potato and fish and shape into patties
7: beat the remaining egg.
8: dip the patties in the egg, then dredge in corn starch and press into bread crumbs.
9: fry on medium heat until golden brown on both sides. Serve with Tartar sauce
